Our professional tasting group is open to all each session involves a finely crafted beverage and curated music listening. Posted below are prior selections by finding this page you can also cue a playlist and select a beverage for sipping.
Beverage Tastings & Music Listening Sessions
Saison Sundays are filled with conversation, music, and friends. I am a brewer working with yeast and wild fermentation. The tasting group has access to upcoming beer releases featuring rustic ales I've created or collected. The brewery hosted tasting events happen when beers are released.
The concept of critical listening is taken from Hi-Fi audio meetings with a group of audiophile enthusiasts. We meet monthly to share new music, enjoy analog sound, and chat all things vintage. Private gatherings are hosted by request.

2026.02.01 - Remains quenchingly intact and well carbonated. The beer is well aged at seven years eight months old the rustic composition presents notes of faded lemongrass herbal tea. The second pour with yeast finishes crisp with smooth edges. Cellar bottles upright to keep the lees compact.

2024.01.11 Orval — Belgian Pale
2026.01.25 - Uniquely ever-changing a hoppy beer bottle conditioned with Brettanomyces the beer develops in character overtime. Two years is right for my liking the hops are pushed back yet the pale ale is still standing. A rewarding effort Orval beer consistently maintains its identity.

2022.11.22 CR Wild Uvita — Warrior Forest - Firewood Lager
Very few of these bottles existed. They are corked & caged wild ales bottle conditioned with wild yeast from Uvita de Osa of Costa Rica. The base beer is sour mash blue corn lager with nance wood chips and guava leaves added to the boil kettle. Brewed and bottled with friends at Vector Brewing in Dallas, Texas September of 2021 the original beer released as a lager. The bottles remaining were reconditioned for cellar keeping in 2022. The result is without exception funky esoteric and on the other side strange. I find this beer highly engaging. The aroma is a boutique of rose hips meets fungi. It's aromatic and finishes dry like cider. The flavor is floral yet woodsy like conventional straight unblended lambic. The corn sweetness is replaced with non-acidic soft grain astringency. In the bottle the lees are compact. The yeast is spent. The pour is very bright golden straw color with a forming head lacking retention.
Cellar notes: 2026.01.18 Store corked bottles horizontal. Cork loss failure to maintain carbonation one bottle poured flat notes oxidation with deep funk zero carbonation.

Maintaining carbonation clear orange amber pour. Today it's drinking like an eight-year-old bottle which has not progress since kindergarten. The beer is clear. What remains is aged. I plan to drink these myself in honor of a passing friend. An odd rustic ale that has been a fan favorite. The beer is settling into the earth. The malt and barks are breaking down. It has fermented tea leaf notes, soft wood rot, and airy crust of pine bark.

Including tracks found while crate digging in central Alabama. The great American south has many miles of destroyed bins. The vinyl is trash littered with collector's catalog re-pressings. The randomness of this playlist leads with a classical composition by Richard Strauss. The soprano introduction is impressive. Lisa della Casa has a controlled sound not overtly vibrato. Her voice is strong. I hope to find more of her work the "Vier Letzte Lieder" collection to welcome surprise. However, these dusty bins are filled quickly with mediocre LPs, old country, and religious albums. The great vinyl releases are gone. Our listening session continues with springtime sweetness layered by Spanish bolero contrasting a fiery romantic fairytale. When Pamela Pollard sings "Abalone Dream" her mystic is spell like. Casting words and lyrics the song is channeling happily a fiction lost in time. Dark folk songs are mysteriously lyrical with spiritual in meaning. Harry Belafonte course corrects. His storytelling inform the listener these lovers tango with magic.
